I absolutely love breakfast... okay maybe it's more like brunch but that's irrelevant right now.
On weekdays, I generally scarf down some cereal or a slice of toast or two but on weekends, I like going all out. I'll wake up late and then proceed to make something delicious and filling because we don't always have a lunch meal.
Now, I'm probably the furthest thing from a chef, let alone a cook. I don't cook often and I don't claim to know what I'm always doing. However, I know for a fact when things taste good and the recipe below tastes absolutely delicious!
I came across a frittata recipe a while back and I thought it would be interesting to try. I didn't end up following the recipe but I did end up using the concept.
A frittata is an Italian egg dish which is similar to an omelette. Some people start off with it on the stove and end off with it in the oven but I just leave it on the stove.
Time: 30-45 minutes
What you need:
A deep frying pan with a lid, preferably non stick
A plastic spatula
1 tsp butter
1/2 tsp garlic
1-2 green chillies
1/2 cup green peppers
1/2 cup red peppers
1/2 cup yellow peppers
1/2 cup cooked mushrooms
3 tbsp chives/green onions, chopped
1 tomato (optional)
Spinach (optional)
4 eggs
1 tsp coriander powder
2 tbsp milk
Crushed green chillies
Salt/Aromat
Black pepper
Handful of cheese
Coriander and chives to garnish
Method:
In the pan, melt the butter. Add garlic, chillies, green, red, yellow peppers, mushrooms, chives, spinach and tomato. Sprinkle salt and black pepper into the mixture. Allow to cook on high heat until the water burns out.
In a separate bowl, mix the eggs, coriander powder, green chillies, milk, salt and black pepper.
When there is no water left in the pan, add a little more butter. Lower the heat. Ensure all the ingredients are well mixed and shake the pan to level everything out. Slowly pour the egg mixture over the ingredients in the pan. Tilt the pan so that everything is coated. DO NOT MIX. Cover the pan with the lid and allow the egg to cook through. Add cheese and allow to melt. Garnish with coriander and chives.
